Apricot and Almond Cake Recipe
Serves 10-12
This recipe is inspired by an almond cake I ate a few years ago in the hills of Mallorca. The small village bakery in Fornalutx had the snow covered cake proudly sitting in the window, beckoning to be eaten. Inside, the lady wrapped a slice in wax paper and I ate it for breakfast with a cup of coffee. It was perfect. My friend Kitty Coles, whose family are from Mallorca, always makes cakes in this way. It’s simple, versatile and perfect to take to a gathering, or to the park.
