Following on from my previous newsletter about heritage flours (and a recipe for digestive biscuits), this newsletter gives you 2 more recipes that use heritage flours.
First we have a quintessential biscuit from my childhood, a Jammie Dodger. A light and soft spelt shortbread sandwiched with your favourite jam (and supersized!). And then a chocolate chip cookie, but not any old one, this one is fancy. This recipe uses brown butter and buckwheat flour (gluten free). Both giving an exceptionally nutty and earthy flavour, whilst keeping the dough fudgy and the edges crisp.
